SPRING STRAWBERRY TIRAMISU

They are very good in the fruit salad, sprinkled with whipped cream, dipped in melted dark chocolate, accompanied by creams and so on and so forth …

In addition, strawberries have many properties to counteract cellulite and aging because they have been included among the foods that “keep young” … and then we start with some tasty recipes.

INGREDIENTS

  • 250 GRAMS OF STRAWBERRIES
  • 200 GRAMS OF SUGAR
  • 300 GRAMS OF MASCARPONE
  • 3 EGGS
  • LADYFINGERS (THE AMOUNT VARIES DEPENDING ON THE WIDTH OF THE PAN YOU USE OR THE CUPS AS AN ALTERNATIVE)

PREPARATION OF THE RECIPE

  1. Blend the strawberries with 100 grams of sugar and 50 ml of water, pour the mixture into a saucepan and over medium heat bring the mixture to a boil, occasionally stirring so as not to stick to the bottom.
  2. When you see the first bubbles, add a small glass of Alchermes and let it boil over low heat for about 20 minutes.
  3. In the meantime, always keeping an eye on the strawberry jelly, whisk three egg whites until they rest, continuing to prepare the mascarpone cream by adding 100 grams of sugar to 3 egg yolks and mounting them with an electric whisk until you obtain a mixture clear and swollen.
  4. Combine 300 g of fresh mascarpone, mixing well to add it to the other ingredients.
  5. Now being very careful not to disassemble them, add the egg whites to the cream and finally check the success of the work by almost completely dipping the index finger in the bowl!
  6. The cake is almost ready, place the biscuits previously soaked in the cooled strawberry mixture in a baking pan, forming the first delicious layer and add a little more strawberry jelly and then cover the biscuits with the mascarpone cream.
  7. Repeat the procedure once more and then put the tiramisu in the fridge immediately so that in a couple of hours, all the ingredients are well combined.
  8. To decorate the cake you can indulge, for the lovers of the classic tiramisu you can sprinkle with bitter cocoa, maybe not too abundantly or as an alternative use the chocolate tails. For lovers of strawberries, instead, you can sprinkle all the cake with whole strawberries or cut to taste.
